This is one of several approaches and recipes for Kimchi stew.
I suggest you add whatever else makes you happy but when in a hurry, I pretty much make it this way and top off with shrooms and green onions.
This is also a great occasional stew when your kimchi reserve is running a little low and has aged to a mild sour flavor. I'm not a chemist, but, the sour variety lends a fuller taste to the finished stew which is not sour. Go figure. You can try this recipe or that of Maangchi and a few others to come at this site and enjoy this hearty Korean stew.
